Pai Mu Tan is one of the most classic and best white teas. It comes from Fujian, south-eastern province of China. Pai Mu Tan is a mixture of young leaves and buds of a bush  da bai,  and  shui xian bai . Collections made at the beginning of spring - in March and April, and this task requires a lot of caution - be careful not to damage the delicate twigs of tea. Name Pai Mu Tan, or White Peony, she comes from the similarity of buds and leaves blend into this popular flower.

Pai Mu Tan has a floral scent, clean and greenish, even slightly golden color infusion and refreshing and pleasant taste. Pai Mu Tan sometimes referred to as the elixir of youth - because of the high content of antioxidants. It is also a rich source of vitamins - including vitamin C and polyphenols.

A method of preparing:

Pai Mu Tan is a good option for people who only know the world of tea - it is easy to prepare and does not require such strict guidelines as the other types of tea. White Peony allows even to experiment with both water temperature and with time brewing. It is only important not to flood the leaves and buds with boiling water, and the water temperature of 70-90 * C. A cup of 200ml is recommended 1-2 teaspoons of leaves Pai Mu Tan. Brewing time should be adjusted to individual preferences: 1-7 minutes - depending on how strong infusion want. Then strain the leaves and the bud and enjoy the perfect cup of tea.
